The scale of the operation is as impressive as the menu itself. With approximately 40% of ingredients sourced from local suppliers, the numbers behind the culinary effort are staggering. In preparation for the big game, orders include 5,000 alligator sausages, 6,500 pounds of shrimp, 12,000 oysters, and over 50,000 Leidenheimer baguettes.
